Gluten free Lemon Olive Oil Cardamom Lilac Cake with Cordyceps

Gluten free Lemon Olive Oil Cardamom Lilac Cake with Cordyceps 

Ingredients:

4 eggs

1 tsp vanilla extract

1/4 cup honey

1 tbsp lemon zest

Juice of 1/2 lemon

1 tbsp fresh lilacs

1/4 cup olive oil

1/2 cup almond flour

1/2 cup coconut flour

1 tbsp Cordyceps

1 tsp baking powder

1 1/2 tsp cardamon

1/4 teaspoon sea salt

Directions:

Preheat your oven to 350°F

Blitz lilacs in a good processor until fine.

Beat the eggs. Add the vanilla, the honey, oil, lemon juice to the eggs.

Add the dry ingredients to the bowl and stir well.

Grease your pan, put in oven and bake for 45-55 minutes, or until a knife in the middle comes out clean.

For the icing I used a lilac steeped coconut oil vegan frosting (total guess work, no recipe) and blended in some pine pollen
