Spiced Stewed Apples with Astragalus and Chaga

Stewed apples are a great way to add immune system supporting and anti-inflammatory spices into your weekly diet. These are great for breakfast, a snack or dessert. You can play with the spice measurements to your liking. 

Ingredients:

  • 2 medium apples chopped
  • 1/4 cup water
  • 1 teaspoon each astragalus and chaga
  • 1 teaspoon fresh grated ginger
  • 1 teaspoon cinnamon
  • 1/4 teaspoon ground cardamom 
  • 1/8 teaspoon nutmeg
  • maple syrup or honey to taste
  • sprinkle of sea salt

In a saucepan combine apples, water and spices. Bring to a simmer and cover. Remove lid and stir every few minutes until apples are soft. Remove from heat and add sweetener of choice, salt, chaga and astragalus. Serve by itself, over oats, top with yogurt.
